If you've set the name of the file where it saves and aren't using a variable, it will always write the same image, so it will overwrite.

When Yawcam starts as a service, it uses the same settings, which means the same ports, but the process is different, so it could be blocked by your firewall. You should manually add those ports to your allowed list on your firewall.

Check that your firewall isn't blocking it.
When Yawcam runs under your user account, it uses javaw.exe, but when it runs as a service, it uses Yawcam_service.exe.

The stream uses port 8081 by default, but if you run more than one instance, you need to use a different port for each instance of Yawcam. so you can have: Yawcam1 on port 8081 Yawcam2 on port 8082 ... Sounds like one of your devices is preventing Yawcam from starting.
Try to unplug unnecessary USB devices and try again. Maybe just keep mouse, keyboard and webcam and try. If it works, then plug other devices one at a time and try again after you plug each device.

That cam looks like it's a standalone camera and needs the SD card, and probably doesn't work as a webcam. If it says that it can work as a webcam, you may be missing some drivers. Did a CD come with the camera?

Reboot your laptop, if it still doesn't work, make sure your SD card doesn't have a "Locked" switch that is set to lock.

Have you tried running Yawcam as an administrator, right click on Yawcam and select "Run as Administrator"

Unfortunately, no, there isn't a way to do this. If your ISP is blocking port 8081, those that have the address saved with 8081 will be blocked by your ISP before they even get to your router, so you don't get a chance to redirect them.

You probably have to pass it a link to the video feed itself, not just the camera's link. if you look up online the model of your camera, you may find the video stream url.
