A "fix" implies that there is something 'broken' which is not the case here with Yawcam. I think you mean to say 'change' the configured value of 75%. By "grade", I also assumed that you are talking about the quality of the stream video that is displayed at the remote viewers. Each viewer can easily and independently 'change' the 'Quality' that works best for their particular viewing situation. This can be achieved simply by the viewer selecting the 'Quality' tab, and choosing the appropriate quality (i.e., 100%, 75%, 50%, 40%, 30%, 20%, 10%, 5% and 1%.) If you wish to 'change' the default 'Quality' setting of 75%, whenever a viewer is connected initially, then you will need to modify the 'template_js.html' file. This file is typically found in the folder at 'C:\Users\[username]\.yawcam\stream\' with a standard Yawcam installation on Win Vista/7/8.x/10. For standard Yawcam installation on Win XP, that file can be found at: 'C:\Documents and Settings\[username]\.yawcam\stream\'
