I've read the help file but where can I find instructions on how to set up the app to work as a CCTV camera and record to HDD on a 24hr basis? Will it create a new folder each day? Will it auto delete after a set period of time(1 month?)?

You can use the save file feature to save pictures on an interval, but the software won't handle deleting after 1 month, you'll have to manage that on your own.

As a CCTV feature, it would probably be better for you to use the save file feature under the motion detection. This way you'll record less and only record when there is motion.
